Description

Ingredients

  • 1 teaspoon olive oil
  • 1 medium white onion, diced
  • 3 cloves garlic, minced
  • 1 cup carrots, thinly sliced
  • 1/2 cup celery, thinly sliced
  • 2 tablespoons flour
  • 2 teaspoon dried oregano
  • 2 teaspoon dried marjoram
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • 1 cup wild rice, uncooked
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • Pepper to taste

Instructions

    1. Sauté: In a large stockpot, heat 2 tablespoons of olive oil over medium heat. Add in chopped carrots, celery, and onion and cook until vegetables are tender. About 10 minutes. 
    2. Add the spices: Once tender, stir in the dried oregano, marjoram, rosemary, salt, pepper, flour, rice, vegetable broth, and heavy cream. Bring the mixture to a boil.  
    3. Bring to simmer: Once boiling, cover and drop heat to low. Let simmer for 10-15 minutes or until rice is tender.
    4. Finish the soup: Taste test and adjust your salt, pepper, and herbs.

Notes

To store, keep in air tight container in the fridge for up to 4 days or freeze for up to 3 months.
