- 1 teaspoon olive oil
- 1 medium white onion, diced
- 3 cloves garlic, minced
- 1 cup carrots, thinly sliced
- 1/2 cup celery, thinly sliced
- 2 tablespoons flour
- 2 teaspoon dried oregano
- 2 teaspoon dried marjoram
- 1/2 teaspoon dried rosemary
- 1 bay leaf
- 1 cup wild rice, uncooked
- 6 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- Pepper to taste
Instructions
- Sauté: In a large stockpot, heat 2 tablespoons of olive oil over medium heat. Add in chopped carrots, celery, and onion and cook until vegetables are tender. About 10 minutes.
- Add the spices: Once tender, stir in the dried oregano, marjoram, rosemary, salt, pepper, flour, rice, vegetable broth, and heavy cream. Bring the mixture to a boil.
- Bring to simmer: Once boiling, cover and drop heat to low. Let simmer for 10-15 minutes or until rice is tender.
- Finish the soup: Taste test and adjust your salt, pepper, and herbs.
Notes
To store, keep in air tight container in the fridge for up to 4 days or freeze for up to 3 months.
