Polar Bear Paws

"It's beginning to look a lot like Christmas.." And feel like it too! Today I started planning my list of Christmas candy that I am making this weekend for all of our family, friends, and coworkers (I will share some of these with you next week!). And oh goodness am I excited to have them on my counter too!

For some strange reason Michael doesn't seem to have a sweet tooth as much as I do. Then again, I do have quite a big one! But he does love coconut just like his Momma. Am I right Ann 🙂 So I tried to make a sweet treat that he would really enjoy and these Polar Bear Paws were quite successful!

A decadent caramel filled with peanuts and covered in white chocolate and coconut. Who wouldn't love these if they love coconut?!

To make this sweet treat you first line a baking sheet with parchment paper and grease it down with some softened butter. This really helps when taking the candy off of the paper! In a microwave safe bowl melt caramels with the butter and cream in 30 second intervals while stirring in between until the mixture is smooth. Once smooth, mix in the peanuts and let mixture cool for 15 minutes stirring occasionally. Scoop out tablespoon sized mounds onto the baking sheet and chill in fridge for at least 1 hour until candy is set. When set, put chocolate in a microwave safe bowl and melt in microwave. Just like the caramels, in 30 second intervals stirring between each until smooth. Dip the caramel mounds in the chocolate and remove with fork to remove the excess chocolate. Place back on the baking sheet and immediately cover with coconut. Repeat with the remaining mounds and chill for a minimum of 1 hour. Remove and enjoy!
