My Favorite Strawberry Summer Salad
A fresh, sweet summer salad loaded with fresh fruits and topped with a simple strawberry balsamic dressing.
Ahh Summer, there you are!
Between work and Michael studying for an important exam, I feel like we haven't had much time to just breathe and enjoy Summer. Thank goodness the first official day of summer was just last week! Plenty of summer to go and we cannot wait for our upcoming trips!
In the meantime, I am trying to make some better choices when it comes to food. Well, at least until we go to Charleston. You can't not eat all of the things while in Charleston!
I see so many people doing the Keto diet or Whole 30 and you want my honest opinion? I don't get it. It's strict, it's not long term, it's just not for me. Some people love these plans and I admire those who do for making it through! Seriously, that's tough! Personally, I would rather make a few positive changes here and there that I know I can do for the long term and not loose my mind. Anyway, I digress. Clearly this subject needs to be a post of its own soon!
In the meantime, I'll be making my favorite Summer salad nonstop. I fell in love with the Panera Bread Strawberry Salad, simply because I love fruit so much! After tweaking my own recipe to create the perfect version, I landed on this glorious creation!
What is your favorite Summer salad?! I'll take all of the ideas I can get for this beach bod!
Salad
1 bag (about 6 cups) fresh spring salad mix
1 cup fresh strawberries, quartered
1 cup fresh blackberries
2 medium peaches, diced
6 ounces feta cheese, crumbled
1 ½ cup candied walnuts
In a large bowl, toss all ingredients.
Dressing
¼ cup balsamic vinegar
¼ cup extra-virgin olive oil
1 cup strawberries
¼ teaspoon Himalayan sea salt
¼ teaspoon cracked black pepper
In food processor, pulse all ingredients until smooth.
