Consider your search for the perfect Gluten Free Blueberry Muffin Recipe over! These are perfectly fluffy and full of the same delicious flavors that are in my favorite blueberry cobbler, but with the added bonus of being gluten-free!


Ingredients

  • 2 1/2 cups blueberries, fresh
  • 1/2 cup almond milk
  • 2 eggs, large
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 cup granulated sugar
  • 1 tsp salt
  • 1 1/2 tsp vanilla extract
  • 8 tbsp butter, unsalted
  • 2 cups gluten free measure for measure flour such as King Arthur

Instructions

  1. Make the batter. In a medium bowl, whisk together melted butter, eggs, almond milk, and vanilla extract. In a larger bowl whisk together flour, sugar, baking powder, cinnamon, and salt. Pour wet ingredients into the dry and stir until fully combined. Add in the blueberries and gently fold in until evenly distributed.
  2. Bake. Place batter into a greased 12 cup muffin tin 3/4 full in each tin and bake at 375 degrees for 30-35 minutes or until you can insert a toothpick and it come out clean.
