A refreshing and simple watermelon salad with mint and fresh lime juice. The perfect summer side dish!
- 4 cups seedless watermelon chunks
- 1 cup blackberries
- 1/2 cup blueberries
- 1/8 cup fresh lime juice
- 1/8 cup mint leaves (chopped)
- himalayan sea salt (to taste)
- Toss the watermelon chunks, blackberries, and blueberries with the lime juice and chopped mint leaves in a large bowl. Keep chilled until ready to serve and then sprinkle with a tad of Himalayan sea salt before serving.
