Caramel Apple Slab Pie

This Caramel Apple Slab Pie actually makes pie making "easy as pie". Plus, there is plenty to share... But once you take a bite I don't think you'll want to!  

Have you ever been in the mood for pie, but not in the mood for all of the time it takes to prep, make, and bake one? SAME. This is why I love slab pies so much. They take half of the time and taste just as good!

This caramel apple slab pie actually came together because a regular bakery pie that we kept picking up at our local Fresh Market. They sell them in halves and we thought we were doing good not eating a whole pie, but then we kept going back for another half, ha. I fell in love with the way that the caramel melts into the apples, flavoring every single bite and knew I had to make my own. Plus, clearly I've just been in a caramel mood lately!

Why should I make a slab pie over a traditional pie?

You may make a slab pie over a traditional pie for the following reasons:

  • They are easier to put together and great for beginners.
  • Slab pies take less time to bake than traditional pies.
  • And less time to cool than traditional pies.
  • Slab pies are easier to cut and serve than traditional pies.
  • This slab pie makes enough for 24 servings making it the perfect choice for parties or large gatherings.
  • Every bite gets a bit of crust and a bit of fruit!

Should I peel the apples for a pie?

This is personal preference. You can leave the peel on your apples if you don't mind the bit of crunch and chew the skin will give to your finished pie, but if you want your filling to meld together while baking I find it best to peel them. 

How long is apple pie good?

Baked apple pies will keep for up to two days covered with plastic wrap at room temperature and an additional 3 days in the fridge. 

Can I freeze apple pie?

Yes! Wrap the pie tightly in plastic wrap or an air tight container for up to 4 months. When ready to eat it, allow it to defrost in the fridge and re-heat it in the oven at 350° for about 30 minutes or until warm.

Caramel Apple Slab Pie Ingredients:

To make this easy Caramel Apple Slab Pie, you will need the following ingredients. See the full recipe card below for detailed amounts and instructions! 

  • Apples - I love using honeycrisp apples when baking, but choose your favorite!
  • Brown sugar - Light or dark brown will work
  • Lemon juice - The juice of 1 lemon should be enough. This keeps your apples from browning.
  • Cornstarch - Just enough to keep your apple mixture from getting too runny.
  • Salt, cinnamon, & vanilla extract - Can't have an apple pie without these!
  • Caramel sauce - Store-bought or homemade 
  • Walnuts - Crushed walnuts are what you're looking for in this recipe.
  • Egg - For a pretty pie crust!
  • Pie crust - You will need two homemade discs or one box of store-bought. Time for a shameless plug... My homemade pie crust is what I use for every pie that I make! It's super easy and way better than store bought!

How to Make Caramel Apple Slab Pie:

To make this Caramel Apple Slab Pie, simply:

  1. Prep - Preheat oven to 400°. Grease a large baking sheet and set aside.
  2. Make the filling - In a large bowl, add apples, brown sugar, lemon juice, cornstarch, cinnamon, salt, and walnuts. Stir until all apples are covered and set in fridge to chill. 
  3. Prep the pie crust - On a lightly floured surface, take two discs of dough and lay side by side overlapping one halfway onto the other. Begin rolling into one large rectangle that will cover your baking sheet with a little overhang. Fold the crust over until you can gently move it onto the baking sheet. Gently press crust to fit the baking sheet then tuck under any overhanging crust and crimp edges. Place in fridge to chill for 10 minutes so crust will keep its shape when baking.
  4. Add filling - Layer apple mixture on top of crust and pour caramel evenly over top of the apples. Brush chilled crust lightly with egg wash.
  5. Bake - Bake the pie for 30 to 35 minutes or until the crust is golden brown and cooked through. Remove the pie from the oven and let it cool on cooling rack. Slice and serve!

 

NOTES:

To store: Keep wrapped in plastic wrap or an airtight container at room temperature for up to 2 days and then move to fridge for up to 3 more days. 

To freeze: Can be frozen in plastic wrap or an airtight container for up to 4 months.

Variations:

  • Change or remove the walnuts
  • Double the caramel!
  • Funny as it is, the flavor will change depending on which apples you use! If you want a sweeter pie go with a sweeter apple such as Gala or Fuji. For a tarter pie try a Granny Smith.

  • 6 honeycrisp apples, peeled and thinly sliced
  • ¼ cup light brown sugar, packed
  • 1 lemon, juiced
  • 1 teaspoon cornstarch
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup caramel sauce
  • ⅔ cup crushed walnuts
  • 1 egg for wash
  • 2 discs homemade pie crust or 1 box store bought

Instructions
