It is apple season and I am feeling it.
These quick and easy apple pies are making me wonder if I could blog solely about pies. I mean, I sure would enjoy the creation (eating) of them!
I love this recipe so much because every bit of it is homemade, yet so EASY. If making your own pie crust intimidates you, I am here to tell you not to let it. If you follow my homemade pie crust recipe it will take you no time at all and you will be so happy with the results. I typically make mine the night before I am making my pies and it makes the process a breeze. If you must used pre-made crust, no judgement here, but just know that I'll be over here eating the tastier pies because of it. Ha!
Let's make pie!
First, I know what you're wondering...
What are the best apples to use to make a pie?
Most like to use Granny Smith apples in pies because of their tart flavor, but it really comes down to personal preference. Personally, I prefer to bake pies with Honeycrisp apples because I love their crisp sweetness. It is worth noting that crisper apples like Granny Smith and Honeycrisp bake much better than softer types like Red Delicious.
Should I peel the apples for a pie?
This is personal preference. You can leave the peel on your apples if you don’t mind the bit of crunch and chew the skin will give to your finished pie, but if you want your filling to meld together while baking I find it best to peel them.

How to Make This Easy Apple Pie Recipe
To make these apple pies, simply:
- Make pie filling: Cut apples into thin slices and place in large mixing bowl. You can choose to leave the skin on or peel according to your preference. Add cinnamon, nutmeg, sugar, brown sugar, and melted butter to bowl and toss until all apple slices are coated.
- Prep pie crust: Place pie crusts on floured surface and roll each crust out a few inches in diameter more than your dish.
- Assemble: Place each crust into its skillet. You want there to be a few inches of dough overhanging the skillet. Spoon apple mixture into each pie crust. Gently fold the overhanging dough over top of the apple mixture. Whisk egg until foamy. Brush the top of each pie crust with the egg wash and sprinkle with granulated sugar.
- Bake: Bake at 350 degrees for up to 1 hour or until the crust is golden brown and filling bubbly.
- Serve: Serve warm with vanilla ice cream and syrupy walnuts!
To store: Keep wrapped in plastic wrap or an airtight container at room temperature for up to 2 days and then move to fridge for up to 3 more days.
To freeze: Can be frozen in plastic wrap or an airtight container for up to 4 months.
