Lemon Raspberry Bundt Cake with Draper James… Oh my! With summer right around the corner, all I keep seeing on the internet are beach body memes! Quite honestly, I decided a long time ago that I would rather run 3 miles a day than give up cake. Balance, right?!
This cake is equal parts impressive and refreshing, making it perfect for any summer BBQ or party. I made this cake for an Al Fresco Dinner Party that was featured on the Draper James Love, Reese Blog last week and it was such a stand out that we had to give it a post of its own! The light lemon bundt cake pairs perfectly with a simple raspberry glaze and piles of fresh raspberries for summer. You know me, I love any cake that includes fresh fruit!
One of my favorite parts about this cake was the shape. I was literally giddy when I inverted it! I used a kugelhopf bundt pan to get the taller shape and let me tell you, I may never use another bundt pan again! I mean, how gorgeous?!
