Quiche Lorraine

A light and fluffy Quiche Lorraine with a perfect flaky crust and flavor packed Swiss cheese filling! Whether you are serving breakfast, brunch, or lunch this is the perfect dish to have on hand! 

I'll admit, I am one of those weird people who have never been into breakfast foods for breakfast. That is why I adore Quiche Lorraine! It is perfect for any meal, any time.

I especially enjoyed serving it at our Mother's Day luncheon as seen in this post!

What Is Quiche Lorraine?

Quiche Lorraine is a French tart with a pastry crust and savory almost custard like filling, typically consisting of cheese, meat, or vegetables. It is great served both hot or cold, making it a lovely dish to make ahead!

What Is In A Quiche Lorraine?

The thing I love most about Quiche Lorraine is that it is made with such simple ingredients. In fact, I bet you already have most everything on hand!

The flaky pastry crust is made with your baking staples:

  • All purpose flour
  • Salt
  • Unsalted butter
  • Ice water

The filling is a perfect mix of light and savory. It includes:

  • Eggs
  • Heavy cream
  • White onion
  • Salt & pepper
  • Paprika
  • Nutmeg
  • Swiss cheese

How To Make A Quiche Lorraine

  1. In bowl of an electric mixer with the paddle attachment, mix 1 cup of flour with salt at low speed. Keeping a low speed, add in the butter a little at a time. Mix until completely incorporated. Add the last cup of flour on a low speed until just blended. Add water until incorporated. Flatten pastry into a disc and chill at least 1 hour or overnight.
  2. Place dough into a greased baking dish and flatten out with fingers across the bottom and all of the way up the sides of the dish. Chill until ready to fill.
  3. Preheat oven to 325 degrees.
  4. Lightly beat the eggs, add heavy cream, onion, salt, pepper, paprika, and nutmeg. Mix until combined. Add cheese and stir to combine. Pour egg mixture into the dish with the pastry shell.
  5. Place dish onto rimmed baking sheet and bake for 45 minutes to 1 hour or until a toothpick inserted comes out clean.

What To Serve With Quiche Lorraine

This cheesy dish makes an incredible centerpiece or addition to any meal. Some of my favorite dishes to serve it with include:

  • A fresh salad
  • Asparagus
  • Fruit salad 
  • Light sandwiches
  • Avocado toast

Yield: One 9" quiche
Prep Time: 10 minutes
Cook Time: 1 hour
Additional Time: 1 hour
Total Time: 2 hours 10 minutes

Ingredients

  • PASTRY CRUST:
  • 2 cups all purpose flour
  • 1 teaspoon salt
  • 2 sticks unsalted butter, cold and cubed
  • ¼ cup ice water
  • FILLING:
  • 5 eggs
  • 1 ¾ cup heavy cream
  • ½ cup thinly chopped white onion
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • ¼ teaspoon paprika
  • ¼ teaspoon nutmeg
  • 1 cup shredded Swiss cheese

Instructions
