Cranberry Pecan Cheeseball

I mentioned last week how we had some terrible fires in the area. Luckily no structures or homes were affected in this first one but just when everyone thought they had gotten control of the first one another fire even larger began about a thirty minute drive from the first!

Prayers are so needed and appreciated for the families who have lost their homes and businesses this week. But no matter the circumstance our God is good and we are thanking Him today for all of the much needed rain here in East Tennessee!

Today is all about one of my weaknesses in this life.. a cheeseball!

My momma used to buy me blocks of cheese all of the time when I lived at home and it is still a definite weakness of mine. Sharp cheddar, cream cheese, provolone, pepper jack, the list goes on and on! This cheeseball is perfect to serve as an appetizer or even a snack for your family. Michael has enjoyed snacking on this one this week 🙂

img_9830Loaded with dried cranberries and chopped pecans this cheeseball is the perfect mix of salty and sweet!

Simply take one 8 ounce block of cream cheese at room temperature and mix with 2 cups of sharp white cheddar. Add in ⅓ of a cup of dried cranberries and mix together well. Once you have mixed the cheese together well lay out a piece of saran wrap large enough to wrap your cheese up with. Lay cheese onto saran wrap and start forming a ball. Once ball is formed, cover tightly with the saran wrap and place in fridge for a minimum of one hour or overnight. Once cheese has chilled add chopped pecans all around the cheeseball (no need to do the bottom). Place cheeseball on serving platter or cheese board with your favorite crackers and enjoy!
