WHAT YOU WILL NEED

To make these vegan whole wheat waffles, you will need the following ingredients. See the full recipe card below for detailed amounts and instructions.

  • Whole wheat flour – Any wheat flour is great for this recipe. My favorite is King Arthur, but any will do. 
  • Baking powder – This is what will help our waffles rise. 
  • Sea salt – Just a bit to help bring out the flavors. 
  • Cinnamon – A little dash of warming spices makes everything feel more special.
  • Almond milk – Any type of milk will work here, really. Just adjust as necessary for the consistency you want. 
  • Coconut oil – Make sure the coconut oil is melted before you measure it. If you don’t have coconut oil on hand, any other type will work as well.
  • Maple syrup – While I prefer the added flavoring of the maple syrup, you can replace with the sweetener of your choice. 
  • Vanilla extract – I’ve made these without vanilla extract plenty of times when I’ve run out and while they are delicious either way, I highly prefer them with the extract.
  • Lemon – A bit of lemon tang helps to round out and really perfect the flavoring of these waffles. You may think this is an easy ingredient to skip over, but I promise you, it makes a big difference in both texture and flavor. 

How to Make ThESE vegan whole wheat waffles

To make these waffles, simply:

  1. Make the batter: Combine all ingredients in a large mixing bowl, stirring until fully incorporated. When you lift a spoonful of batter out of the bowl it should be runny enough to fall off your spoon and dissolve back into the rest of the batter. Add more almond milk a tablespoon at a time as necessary.

  2. Cook the waffles: Lightly grease the waffle iron with olive or coconut oil. If using a Belgian waffle maker, place about 1/3 to 1/2 cup of batter into each iron and cook according to your iron’s settings. 

  3. Plate: Top with berries, maple syrup, or any toppings of your choice.

NOTES

Be sure not to over mix your batter, so we get fluffy waffles. Stir until fully incorporated, but don’t over do it. 

TIPS & Variations

  • Try adding chocolate chips, nuts, or blueberries into your batter.
  • If you’re not happy with the height of your waffles, next time try to add a bit more baking powder or lemon juice as both of these things help with the rise.
