"The April winds are magical, and thrill our tuneful frames. The garden walks are passional, to bachelors and dames."
– ralph waldo emerson
If March was the amuse-bouche of the growing season, April is the tasting menu. March teases, April delivers. With gardens and markets brimming with tender, sun-kissed produce, April ushers in a true celebration of the spring season. This month, look out for delicate greens like arugula, butter lettuce, and sorrel – perfect for tossing into fresh salads or layering on open-faced sandwiches. Sweet peas, snap peas, and spring onions bring a burst of crunch and subtle sweetness, while asparagus and artichokes continue to shine in pastas and tarts. Rhubarb finally makes its tart, ruby-red appearance, ideal for jams, salads, or pairing with strawberries in seasonal desserts. Baby carrots, new potatoes, and radishes offer both color and crunch, and herbs like mint, chives, and parsley add bright, fragrant finishing touches. Here you’ll find fifteen recipes to help make the most of April’s colorful offerings.
what to make in APRIL:
one bowl simple honey cake
This simple Honey Cake Recipe is tender and moist perfection due to our main ingredient, honey! This one bowl cake is quick to make and quick to bake making it the ideal recipe to bake with littles. If you love a lemon honey flavor this recipe is for you and I’m willing to bet you already have the ingredients on hand.
mango spinach smoothie
Get ready for this delicious Mango Spinach Smoothie to become your favorite new healthy green smoothie. Full of fresh flavor and nutrition, this vibrant smoothie is made with mango, spinach, pineapple, banana, chia seeds, hemp seeds, and fresh mint leaves. Perfect use of April produce.
WHITE BEAN KALE SALAD
Made with kale (which could easily swap out for a seasonal spinach), arugula, white beans, toasted bread crumbs, and the best tahini lemon dressing. This salad is fresh, light, and I absolutely love the citrus with the flavor of the white beans. Add some roasted new potatoes if you’re feeling frisky!
Made with broccoli, chickpeas, potatoes, pumpkin seeds, and your favorite bbq sauce; at under 20 minutes this sheet pan dinner will quickly become your new weeknight go-to.
strawberry rhubarb jam
Call me Meghan Markle, because this jam (or should we call it preserves?) is a house favorite. It comes together in under 30 minutes and can easily be used as a template to substitute other fruits as well. We’re hitting prime rhubarb season, so be sure to keep an eye peeled when your in your produce section. I usually find mine near the celery.
